Make mealtime more fun by getting your kids involved in planning and cooking tasty dishes. These playful summertime recipes combine fresh flavors and require little to no cook time, perfect for this time of year!
Create a storybook scene on a plate with this imaginative, colorful salad. Hard-boil eggs, then place them in cold water and remove their shells. Shred lettuce and spread it in a layer on a plate. Add sliced cucumbers, peppers, mushrooms or other favorite toppings. Stand the eggs on the lettuce, and place half of a tomato on top of each. Dot the tomato halves with salad dressing or mayonnaise so they look like toadstools.
Head outside and heat up the grill for this simple and delicious summertime recipe. Make small rounds out of dough so each person can customize his or her own pizza. Brush dough with olive oil and cook on the grill for 2 to 3 minutes, until the bottom begins to crisp up and char. Remove from the grill and add chopped tomatoes, onions and goat cheese (or feta, Parmesan, mozzarella, etc.). Cook for another 3 to 5 minutes until the cheese begins to melt. Transfer to a cutting board and add more of your favorite toppings, such as roasted red peppers, spinach and caramelized onions.
Mexican tostadas are a quick and simple meal you eat with your hands – so don’t be afraid to get messy! Buy packaged tostada shells or make your own by frying corn tortillas in canola or grapeseed oil for about 30 seconds on each side. Spread a layer of refried beans on the tostada shell, then add all the toppings it can handle – for example, avocado, tomato, lettuce, cheese, cilantro, sour cream and salsa.
These dragonfly sandwiches are fun to make and even more fun to eat. Place several slices of turkey on top of each other and roll them into a tight cylinder. Put this on the center of the plate. Cut off one-third of a pickle to use as the dragonfly’s head at the top of the turkey roll, adding small carrot sticks as antennae. Add the rest of the pickle at the bottom of the turkey for the tail.
Use clean kitchen scissors to cut pita bread into four 1-inch ovals that will be the base of the wings. Mix cream cheese, yogurt, turmeric, garlic powder and salt in a bowl. Spread it on top of the pita bread, and add stacks of fruit slices.
